Sunflower Choccy Cookies

 
 

What would you define as ‘normal food’? Someone recently commented that the reason why Malakai wouldn’t eat all of the food in his lunchbox is because other children around him eat ‘normal foods’. I say this without any shame on what others feed their little ones, because I understand I’m in a bubble and often the importance of real food is still not known, though once we know better, hopefully we do better. But.. these ‘normal foods’ she was referring to comprised of packaged non-foods, full of additives, large amounts of sugar, booming with chemical flavourings... and are now apparently deemed as normal? On this day he had a baked goodie or two from home, jellies, leftover slow cooked lamb shanks, zucchini + sweet potato mash, some plain rice crackers, fruit and seeds because he loves munching on them. I’m not sure why FOOD would be seen as ABNORMAL.

These are cookies baked today for the family but also his daycare, and are not only out of real foods, but are effing YUM. And he LOVES them. And if his appetite calls for them, he will enjoy them, just like all of his other food. We ate 3638 of them today with several glasses of coconut water kefir and I think had a bloody great time doing it. And for the third time sharing these, here they are again hehe!

INGREDIENTS
1 1/2 cups sunflower seeds - ground into a meal
4 tbsp cacao powder
3 tbsp melted coconut oil or ghee
4 tbsp collagen
1 egg
3-4 tbsp Lakanto for keto/sugar free, or coconut or rapadura sugar
1 tsp vanilla essence
1/2 tsp baking soda
1/4 cup chocolate chips of your choice

Blend together, roll into even sized balls and flatten, top with chopped choccie and bake in the oven at 180 degrees for 15 minutes. Allow to cool, and enjoy!
