Almond Choccie Collagen Cookies

Any Sunday that ends in baking cookies is an extremely successful Sunday .. particularly because any lingering anxiety about Monday then dissipates now that you’ve welcomed 3-7 cookie breaks through your day? I cannot stress how much I love these. They are a mixture of chewy, soft and crunchy - a lotta wins in one mouthful. These are GF, DF, can be made sugar free, contain collagen for all of collagens incredible benefits, but most importantly are SO yum and take no more than 30 minutes to make and bake and eat!

INGREDIENTS
2 cups blanched almond meal
1 egg
4 tablespoons collagen
3 tablespoons coconut oil
2 teaspoons vanilla essence
3 tablespoons sweetener of choice including Lakanto, coconut sugar, rapadura sugar or maple syrup
1⁄2 cup chocolate of choice for topping - I use my Rocher Chocolate on my feed or @pana_organic
* I also like a decent pinch of salt
* You can get fancy and add ginger, cinnamon, a few withania tablets, drops of orange oil, whatever!

METHOD
1. Preheat your oven to 180 degrees celsius.
2. Combine all of the ingredients apart from the chocolate chips and either mix thoroughly
or blend.
3. Scooping out a tablespoon at a time, roll into balls and flatten with your hands.
4. Place on a lined baking tray and press the chocolate chips into the cookies.
5. Place them all in your oven and bake for 15-20 minutes or until slightly golden.
6. Whilst they are delicious warm, they are more firm/together once they have cooled.
