Sweet Potaty Donut Balls

 
 

Let’s brighten things with some baking of moreish good for you donut balls. This might be the kind of recipe that you could line up the mixture and get your little ones to help you roll them, or get the mixture bowl and watch a romcom whilst eating/rolling the mixture yourself. ENJOY!

INGREDIENTS
250g boiled or steamed sweet potato
3/4 cup cassava flour - I use the AKN organics brand
1 teaspoon vanilla essence
1 tablespoon coconut oil or ghee
3 teaspoons Ceylon cinnamon
1 teaspoon baking powder
2 tablespoons Lakanto if you need to remain completely sugar free, coconut or rapadura sugar - or more to taste

BLEND, ROLL, BAKE at 180 degrees for 20 minutes or until they are cooked through. In a little bowl, add in 1 more tablespoon of sweetener and then 1/2 tablespoon more cinnamon. If you have time, roll them in a little melted coconut oil or ghee, and then into the cinnamon mix.
