Green Eggs

It seems Dr Seuss was onto something fabulous? Green eggs .. but with bacon please πŸ‘πŸ». This is probably the best (re)discovery I have ever made, and it continues to be one of our favourite breakfasts ever since Malakai was introduced to eggs as a littler bubba. I often mix it up by adding bone broth or bone broth concentrate, coriander or basil instead of dill, popping fermented condiments, pesto, mayonnaise or any other flavours you or your cherub may love on the side. Chemical free/salt only bacon is of course one of the greatest sides, or ham if you’re a huge fan of Dr Seuss.


INGREDIENTS //
6 organic/pastured eggs
2 big handfuls of spinach
A small handful of your choice of herbs (here I used dill)
Salt and pepper to taste
A fat to cook with!

METHOD //
Blend all of the above, and heat up your pan. Wait until it’s hot, and then add the fat. Stir stir stir, and serve!

Enjoy yourself, with your little muffin or take it on the road if you’re SCRAMBLING out the door. HAHA
