Pumpkin Choc Brownie



2 cups steamed pumpkin

1/2 cup cacao powder

1/2 cup coconut flour

1 tsp vanilla essence

3 free range, organic eggs

1 tsp bicarbonate soda

Pinch of salt

4 tbsp Lakanto, stevia drops to taste for sugar free, or, honey, maple syrup, rapadura sugar or coconut sugar

Optional: 4-8 drops peppermint oil (varying brands have varying strengths, so gradually add to your desired taste)



1. Preheat your oven to 180 degrees celcius. 

2. Place all ingredients into a blender or bowl, and combine all ingredients well, making sure there are no chunks of pumpkin remaining. 

3. Place in your oven and bake for 40 minutes, or until a knife comes out clean. 

4. Serve alone, with coconut yogurt, bulletproof ice-cream and/or berries.
