Dairy and nut free pesto that is more cleansing than you know. Herbs like these have the ability to cleanse you of heavy metals and other toxins that we are faced with daily. But what the heck, this is not why I eat this. I eat it because it is so damn good on everything, turns a boring salad into something moreish and this recipe just works every time!
1 cup cold pressed olive oil
2 cups fresh mint, leaves only (1 bunch)
2 cups parsley, leaves only (1 big bunch)
1 cup coriander, leaves and some stem is okay (1 small bunch)
1/2 cup sunflower seeds or macadamia nuts (preferably activated or toasted slightly, though raw is fine)
1/4 cup lemon juice
2 tsp apple cider vinegar
3 small cloves of garlic
1/2 tsp pepper
1/2 tsp Himalayan salt
1. Place all ingredients into your blender or food presser, and place on medium to high speed to blend through well. Once all is well combined, taste and ensure your tastebuds are happy. You may require a little more salt or lemon to suit you.
2. Serve with Pepper and Co. Seed Crackers, on some Perfect Bread, on the side of your protein or on top of salad.
