Dense and Delicious Cassava Brownies

Ingredients

1 1/4 cups cassava flour - only with the AKN brand. If you use Otto’s Cassava flour, then halve the amount as it is requires much more liquid.

1 cup water

1/2 cup coconut oil or ghee

4 tablespoons cacao powder

4-5 tablespoons sweetener - I used Lakanto, you could use coconut sugar, rapadura sugar, stevia or you may try maple syrup

2 teaspoons vanilla essence

1/2 teaspoon baking soda

Optional toppings: toasted hazelnuts (see below), or my Chocolate Mousse!

Optional add in: 1/2 cup collagen powder

Method

  1. Preheat your oven to 180 degrees celcius, and combine all of the ingredients in your blender or a mixing bowl.

  2. Line a loaf tin with baking paper, scoop in the mixture, and spread it out evenly with the back of a spoon.

  3. Place it in your oven and bake for 15-20 minutes. Allow to cool slightly. It will be chewy and delicious when it comes out, though the longer it sits it will become soft, a little chewy still, but mostly seriously dense and delicious.

  4. Best served warm or at room temperature. Enjoy alone or with the the chocolate mousse and/or hazelnuts roasted in your oven for 15-20 minutes.
